What's For Dinner!


Last night for dinner I attempted a new recipe for ribs.. and WOW!  That was quite the experience...I started with some sweet potato fries, mixed with olive oil, brown sugar, salt, and pepper-- pop those delicious morsels in the oven and bake for 20-30 minutes.  Now my ribs had been cooking in the crock pot all day.. smelling so tasty!  I had this special rub of paprika, brown sugar, chili powder, salt, and pepper on them, then when the fries where close to being finished I took them out of the crock pot and my new recipe said to broil them in the oven.  Broil, previous to this recipe I have NEVER used the broil option on my oven---talk about cooking blind!  Now keep in mind that my perfect sweet potato fries are still in the oven-- I put the ribs on a pan, add the BBQ sauce flip the oven switch to broil (most evil word in the English language!) and pop the ribs in the oven.  Seconds... seriously seconds!  I see a stream of smoke.. so embarrassing yes smoke coming from the back burner--- I yank the oven door down, and quickly, like super sonic speed, pull the sweet potato fries out--- some were lost, they fought a good fight... we had a memorial, and enjoyed the rest in their honor.  Now, broil--I hate the word-- not only burned my fries, but we also have hyper sensitive smoke alarms.  Imagine with me, a few puffs of smoke, I flip on every fan and open every window possible, and still every 5 minutes the smoke alarm is going off.  Imagine me running back and forth from the kitchen to the bedroom waving a towel in front of the alarm to make it shut up!  I was bitter.... just a little. Yikes!  In the end, dinner was finished, and the ribs came out so tasty, like finger licking good--- makes me hungry just thinking about those ribs... Needless to say broil will forever be an example of a "Magillacuddy" moment in our lives.  Do you have any funny cooking stories?  Don't forget to press the follow button and check back regularly!  See ya soon!

A Porch with a View

Today was a beautiful day.. A slight chill in the air, the sun shining, dogs sunbathing--what more could a girl ask for!  By the time Mike got home from work however and we were getting ready for our walk-- a HUGE fog bank was rolling in.  I had this great walk planned for us from our doorstep to the beach, the fog made it actually feel like WINTER, which is a major bonus plus we discovered a new path that we will definitely start visiting more often. I decided when I got home I would share a picture from our porch of our foggy evening.  Stay tuned, tomorrow I will be posting a great story of our dinner tonight!  Ribs, Sweet Potato Fries, Oh My! Christmas Tradition: Operation Cannoli!

This week has been crazy! I feel like I've been working for Santa with all the shopping I've been doing lately... Which I mean who doesn't love shopping! Tonight Mike and I had a nice, quiet evening at home (minus the quiet part)... And we made Cannoli's, but not just any cannoli--- Carlo's "Cake Boss"-- cannoli's! And let me tell you they are fabulous, beside at Christmas calories disappear so I'm enjoying every single bite!

Christmas Tradition #3: Shopping in Crazyville!

By far my favorite thing to do during the Christmas season is to SHOP! And let me tell you this Irish girl knows how to get her shop on! Today we went shopping at an Outlet mall plus several, and boy oh boy do I mean several!, trips to Target! Don't you love when you buy wonderful gifts and then get home to realize that you're out of tape! I'm starting to think we have a tape troll living under the sofa. What was on my shopping list you might ask.... Here it is:

Christmas Tradition #Dos: Oh Christmas Tree

Oh Christmas Tree, Oh Christmas Tree!  
I absolutely love singing Christmas carols!  Sometimes just to make Mike laugh I will sing like the girl from the movie "Prancer" as loud and off key as possible, that's a sure fire way to get a little attention.  Anywho, tradition number two is something I didn't realize I do every year until I started thinking about it--- I always take a picture of my tree, and I will sit and stare at my favorite ornaments through out the day... I didn't say is was a productive tradition-- just a favorite!  Here are a few pictures of our tree this year, plus my favorite ornaments, enjoy!

Christmas Tradition #1

Growing up my mom and I always had special Christmas traditions, now Mike and I have the joy of creating our own traditions! I'm planning on doing a new update from now until Christmas, so stop daily and see what TheAshleys are doing :)


Tradition Number One: Shake, Rub... Try to gain super hero powers to try and figure out what our wrapped presents are! Mike usually guesses right every time :( However this year I've taken stealth wrapping classes-- booyah (yes I just said that)--We will see how successful my sneaky wrapping is in just a few short days!

Numbero Uno!

Welcome to Magillacuddy!  My name is Courtney, this is my blog, which you probably knew since we're just getting started.... but boy o' boy I am so excited to start this adventure!  When I decided to start a blog I had to decide what I wanted to write about, why people would actually take time to read what I was thinking, to experience life through my eyes... With family all across the country I figured "Why not Cash!" (Cash is my nickname given to me by a very special friend...)  So the next task was to pick a name for my beloved blog... I wanted something original, but something that had meaning; thus Magillacuddy!  As a kid my mom and I would watch "I Love Lucy" episode after episode, and the idea of watching Lucy "Magillacuddy" attempt all these crazy tasks and jobs made me think about my life--so I figured Magillacuddy fit perfectly!  Allow me to warmly welcome you to Magillacuddy, hope of board this safari--- it's going to be an adventure for sure!
